Continuing our month spotlighting great chefs and recipes we have the well-known Lance Seeto of Mana Island Resort & Spa. The resort is located in the center of the Mamanuca Island group in a hidden paradise with sandy beaches and clear blue waters.

Australian Lance Seeto challenges his guests to think differently about Fiji’s delicious tropical island fare since arriving to Fiji in 2009. Not only has Lance spearheaded a culinary revolution in Fiji, he’s helped to spotlight the Fijian way of life by using fresh produce, herbs, and fish found in Fiji. Seeto also creates medicinal food recipes, inspired by the traditional South Pacific.

While Seeto has much respect for his native culture of Papua New Guinea and Australian Chinese heritage, the Fijian way of life has touched him. After leaving Australia in 2009, he found a new life perspective in Fiji, which he discovered from the happy Fijians.

Seeto is a member of the Wine & Travel Writers Association. And his articles appear online, in regional newspapers and tourism and inflight magazines across Australia, Asia, and the South Pacific. He’s won numerous awards for his creations and he even wrote his own cookbook, “Coconut Bliss: Inspiration and the Ancient Foods of Life.”

Gluten Free Beetroot & Chocolate Cake by Lance Seeto, Mana Island Resort & Spa

Mana Island Chef Lance Seeto

Packed full of fiber, vitamin E, and antioxidants, this recipe also uses healthy extra virgin olive oil instead of butter or margarine.

 

Ingredients:

 

100 grams Dark Chocolate

3 only Eggs

300 grams Raw sugar

240 ml Olive Oil

300 grams Cooked Beetroots

1 tsp Vanilla Extract

30 grams Cocoa Powder

200 grams Ground Almond Meal

1 1/2 tsp Baking powder

1/4 tsp Sea Salt

 

Directions:

 

Pre-heat oven to 180 degrees Celsius.

To cook the beetroots, wash thoroughly and place in a pot full of cold water.

Bring pot to the boil and cook the beets until soft when poked with a knife (approximately 30 minutes, though this depends on the size of the beets).

When cooked, run the beets under cold water in the sink and rub off the skins.

Coconut & Rum Bread Pudding by Lance Seeto, Mana Island Resort & Spa

5 slices stale wheat bread, cubed (about 6 loosely packed cups)

1 1/2 cup light coconut milk

1/2 cup raw sugar

3 large eggs

1 tablespoon vanilla extract

1 1/2 teaspoon cinnamon

1/2 cup raisins

1/4 cup light brown sugar (for topping)

1/4 cup softened butter (for topping)

1/2 cup grated coconut (for topping)

 

Preheat the oven to 165.
